Classic hotpot (火锅 huǒguō /hwor-gwor/ 'fire-pot') is a common comfort meal in Asia where a simmering pot of soup is placed in the centre of the table, where various ingredients are cooked in.

Soup Base

Prepare the hot pot base according to the instructions on the packet. 1 packet would usually be sufficient for 1 meal, diluted with about 6 to 8 cups of water. Simply wait until your hotpot soup comes to a boil, and then your meal can begin!
As the soup bubbles away during the meal, it will reduce by quite a lot. When it has reduced to about half, just add more water and wait for it to boil before continuing with your meal. This is to ensure that the ingredients will be cooked through and safe to eat.

To bring out the flavours of the raw ingredients, we recommend heating up some neutral oil (i.e. sunflower oil, peanut oil etc.) and carefully pour it over the ingredients.
CAUTION: The oil will be very hot so be careful and use a heat-safe dish!
