Chicken & Mushroom Soup

Chicken, mushroom, and bamboo shoots soup is a flavourful and comforting dish that's simple to prepare. Enjoy this warm, savoury soup as a meal on its own or paired with steamed rice or noodles. 🌟

 

Ingredients:
  1. Chicken: 250g (cut into thin slices or small pieces)

  2. Dried Shiitake Mushrooms: 150g

  3. Bamboo shoots: 100g

  4. Ginger: 1-inch piece (sliced thinly)

  5. Salt: To taste

  6. Spring onions: 1 piece

  7. Huadiao Cooking wine: 10ml


Cooking Instruction:

1.Prepare Ingredients:

Cut chicken into small pieces.

Rehydrate dried mushrooms in warm water for 30 minutes.


2.Cook Soup:

Stack the chicken pieces in the pot, add spring onions, ginger and Huadiao cooking wine. Add rehydrate shiitake mushrooms and mushroom water, boil them until the water bubbling.

Reduce heat to a simmer. Put on the pot lid, cook for 45 minutes.

Then add bamboo shoots, dried red dates and goji berries, cook for another 15 minutes.


3.Season:

Add salt to taste.


Serve:

Ladle the soup into bowls and garnish with spring onions pieces.
